'Dosa' is a snack we Indians prepare in various ways - more than 50 ways. But the queen of 'Dosa' is the masala dosa. You can try making it and it is easy.
Here is a step by step recipe.

They look delicious but the process is laborious to say the least! Can you use rice flour and gram flour (or urad dal flour, perhaps) instead of the whole grains (to save grinding the paste, which I would have to do in a mortar or a food processor, I think)?
We are lucky in that we have a pretty good Indian store nearby (it is also the Post Office), so I can find most ingredients. They do have a 'Dosa mix' but it's just 'mix-and-go' and doesn't have to ferment overnight, so I wouldn't expect it to be very good. Maybe I should talk to the lady who runs the store.
I suppose that, if you make masala dosa regularly, you will always have a batch of batter ready (and one for the next day).

Nowadays we do get ready mixes but as you have rightly said they do not taste as good as those made at home. The batter can be kept in the fridge and taken out a couple of hours before to make the dosas the next day. You can use powders except the black gram dal which needs to be soaked and ground to a paste. You must use a largish pan which is nonstick. They turn nice and crisp. Eat them hot with potato 'bhaji'

Masala dosa is a most wonderful snack. I used to buy it nearly everyday in the street when I was in India many years ago.

Were you India on work? Tell us more. You must have tasted other snacks as well. We have a large cuisine. Have you tasted Bhel Puri - a beach 'goodie'?

@allknowing I was travelling in India for a year 1979/80. Food was a highlight.
