A question for musicians

I'm back for now. I will write about the books I read/ listened to on Monday.
Anyway my question to musicians is when you don't have the sheet of music you want are supposed to play, do you ad-lib the music?
I play a clarinet at church. Sometimes when I don't have the sheet music I ad-lib the notes.

I kind of think of it like how I think of jazz. Some music is a happening and in a way shouldn't follow a set pattern specially those pieces that require audience. Even facial expression or movement can affect mood and certainly dancing and hand clapping. I can understand a more rigid structured approach. All the classics employ it. I just like free style.
