A really good salad

My local grocery store makes something called "superfood salad" and it's one of my favorites. If you don't have a Fry's or Kroger near you and want to try it, here's how to make it. Take kale leaves and cut or tear them into smallish pieces, palm size or smaller. Add cherry or grape tomatoes, blueberries, craisins, cashews, a little chopped red onion, green edamame, and sunflower seeds. Toss with a raspberry pomegranate vinaigrette dressing (or your favorite dressing) and let it chill in the fridge for a bit. I love this stuff, but remember to serve it in small portions - it's a bit high in sugar, but it's compact so a little goes a long way.

Because it was full of antioxident rich foods like kale, edamame, blueberries, red onion, nuts and seeds. They are really good for you.

I've never seen that carried at our Fry's, but it's a pretty small store. I'm heading to Phoenix this weekend. I'll have to see if one of the Marketplace stores has it. Is it something they normally stock in the refrigerated cases?

You'll find it over in the deli - possibly in the cold case, possibly in the deli case where they serve you.
