Do You Eat Skin? Turkey, Chicken, but especially DUCK?

No, I'm not encouraging cannabalism. When I ask if you eat skin, I mean animal skin say for dinner or a snack? I try to cook a bird so the skin isn't wasted. Chickens I roast with the skin uncovered. Ditto for turkeys. I peel the skin over the breast, salt it well, and enjoy it as the treat it is. Best of all: I positively delight in eating duck skin! What, do you say it's too greasy? When I go to roast a duck (which I haven't done in some time due to the rising price), I put fork marks in the skin to allow excess fat to run out the holes. I brown the duck and cook it thoroughly (I don't like duck cooked like the nutty chefs would suggest it should be cooked). I thoroughly salt and this is the very best. You?

I absolutely love eating the skin of chicken turkey and duck I also love adding the fat juices after they are cooked and using it in the gravy.

There you go! A fellow with an intelligent perspective! I like that better than: kill the animal, then throw it away. Besides, it tastes delicious. Most of our health problems are probably due to genetic issues and lack of exercise.

@JonnyRich I am a retired chemist. I make excellent, lump-free gravy! I love a combination of about 50% mashed potatoes and 50% gravy. AND I like to include tiny pieces of giblets in the gravy. As Jackie Gleason used to say, "How sweet it is!"

It depends, sometimes it's really good tasting and sometimes not so much. I'm not a fan of eating the skin if there's a bunch of fat on it either.
