Today's Lunch: Pasta Salad

This pasta salad is so easy to make, it will inspire you to make more. After looking in my refrigerator finding bits and pieces of this and that, I decided today's lunch was going to be a pasta salad. I grabbed a pan out of the cupboard. Boiled some water for my noodles. And really folks choose any kind of noodles you want, I just grabbed what was in my cupboard. It was a choice between thin spaghetti, ring noodles, and these band noodles. I then took out another pot to hard boil 4 eggs. With my eldest daughter home, I wanted to make sure she got something to eat as well. 1 to 2 eggs will do per person depending on how much they like eggs. Then i grabbed some fresh parsley, a tomato, and a can of chicken. I like the canned chicken because it's quick to get the job done. If I was making a big dinner I'd cook a chicken and strip it, but this is lunch. It's here! I also made homemade salad dressing... I had some leftover lemon juice from a lemon I used the other day. Don't toss it out. Squeeze the remaining lemon juice into a small container and save it, you never know what you can use it with, like my homemade salad dressing. Use 1 tablespoon of lemon juice, 3 tablespoons of extra virgin olive oil, add salt, pepper, whole grain mustard seed and a teaspoon of honey. Shake until well mixed and chill while making the salad. After draining my noodles in cold water, I then peeled my eggs. Add the noodles to the plate first, toss on some fresh parsley pieces then open the chicken. Strain the chicken well. Again, use as much as you like. It's really up to you. I like making meals, it's more of an art form to me, like painting a picture, because I take photos of everything. lol So, you've got your noodles on the plate, parsley, chicken, now it's time to cut up the tomato and the eggs. Add them to the dish. Grab to salad dressing... any kind you like. I used my homemade dressing I just made and there it is, "lunch". I hope you like the photo.

I've learned how to make my own noodles from scratch but want to get my kitchen done before I start making them myself. I'm turning it into more of a cafe' style kitchen. Just bought a hutch/bar that can seat four. I'm doing black and out painting, vintage signs. It's been a lot of fun putting it together little by little. Being you don't eat noodles, what a constant for your family?
