Murphy's Law-Anything that can go wrong will go wrong.
I followed the instructions exactly and after two hours later the milk was so liquid. I re-read the instructions and it occurred to me that they had to be wrong. I was going by two different recipes. One for the ingredients and one to get the cheese to be cheese. I found the amount of rennet the ingredient one called for just wasn't enough so I heated the milk back up, adding more rennet and hoped for the best. After another two hour SUCCESS. We had curd!
After another cooking process we drained the curds and followed the instructions for using the microwave. Then it told me to knead the hot mess and I did. I won't say what choice words I used while burning my hands.
It was supposed to get stretchy. It didn't. Let it cool down and tried again. Still not stretchy. Time to work had come to an end so I put it in the fridge and we'll see if maybe more microwaving will do the trick but that will have to wait until I get home from work tomorrow. If not, we'll just have some really soft cheesy curd type stuff.
This is going to take some practice to get right but in retrospect it could have been worse!

It's a learning process. The whole purpose of doing the recipe (along with doing a new recipe a week) is for my daughter to experience new things. She loves cooking so that's what we're doing. Not only that but it is therapy for her. My daughter is autistic.
