Vitamin A is an important ingredient in our food. Lack of Vitamin A lead to night blindness.
Red Amaranth, Indian spinach and spinach are very rich in Vitamin A. Red Amaranth is called lal shakh in bengal, Indian spinach is called pui shakh in bengal, spinach is called palang shakh in bengal.
All these vegetables are cooked and consumed with rice or chapatis in India. They are not only tasty and delicious but also have health benefits. They also help in bowels.
Palang shakh is cooked in different ways and cooked as dishes like palak paneer, palak anda etc.
As far as lal shakh and pui shakh is concerned sometimes they are cooked with prawns. Non-vegetarians eat them in that way. They should be consumed for food benefit.
