A Doubt clarified on making soft and fluffy Idlies

One of the readers have asked to clarify what is the secret of making Ilis highly soft and fluffy. Though this is totally a secret in business it is being reveale in the interest of public. Getting Idlies soft and fluffy is entirely depends upon the amount of water that is being added. When you grind Urad dal there should be sufficint amount of water. Urad dal absorbs water nicely. So, it should be allowed to stay in water for 3-4 hours. When you grind it it should be soapy and smooth. When you grind rice it is enough to soake it in water just for an hour as rice does not require more time. Finally, when you ad these two and grin it should always be kept in mind that the mix is somewhat smooth and it should drop to the ground taking just half a minute time. On the whole the consistency should be fluffy and the batter should fall down easily from the spoon. Never grind rice and Urad Dal together at a time. Grind them separately and then mix them. When you soak rice ad some fenugreek seeds.
