What do you do with leftover Fried Rice?

I don't know if this is universally true, but here in the US, Chinese take out offers a choice of single items or combination plates. If you've ever ordered a combination plate, you know that well over half of the order is Fried Rice. I always have some leftover. ALWAYS! So, what do I do with it since the main course is now long gone? I make breakfast!! Yep - breakfast! Fried Rice already has eggs incorporated into it, so I just double down on the egg. I reheat the rice in the pan (usually the same pan I used to cook the bacon) and then pour over my scrambled eggs and begin stirring. When the eggs are cooked, but still moist, I turn off the heat and grab my plate (sometimes a bowl, if I don't have bacon) and serve! It's actually pretty good. Today I didn't add soy sauce because I didn't have as much rice as I usually do, but I will also add soy sauce while it's reheating before pouring the egg over the rice. For me, this is a great way to use up leftover fried rice.

We don't get take out much and when we do we normally don't have much left overs if any at all. However the fried rice is great because you can do things like you did with it or just make a new main dish and reheat the rice using it as a side once again.

It's been a while since I had any leftover, but when we get delivery, I almost always have some leftover because they give so much. I wanted to bring mine home Monday night, but my dining companion decided he was still hungry and ate it, so no egg & rice breakfast for me! LOL

@skysnap I like Thai noodles. Pad See Yu (or whatever the actual spelling is) is pretty good. I've ordered that several times.

I figured since the rice usually already had egg in it, why not just add more. It's filling and actually pretty tasty!

I've done that, too. But, once I tried it as a breakfast, I find I look forward to having it as that the next morning (or morning after as this was). Unless someone ordered a quart of it, I don't usually have enough for more than one more meal.

I don't know how this happens with you......I never have leftover but I always thought they send me less !!!

That may be a cultural thing. Here we are almost always served far more than we need for a single meal. It's unnecessary, but if you have good self-control (I don't always), it will easily make two meals. You are probably receiving the proper amount for a serving.

I usually add some chopped up veggies and some cheese and have it for lunch. I love your idea, too and will be doing that the next time I get Chinese food!
