Lentil soup with croutons for lunch

I had a wonderful salad to begin with, as the doctor suggested a big salad every day. I imagine thta it has to do with filling my tummy and eating less carbs. But I had lentils and Leticia made an awesome lentil soup. I helped out with the croutons. I like them homemade, with olive oil and plenty of crushed garlic. Then after I fry them a bit, I place them in the oven to dry. YUM! I´ll take a brief nap now before I get ready to recieve the friends that come on Tuesday for tea. What did you eat for lunch? Or is it dinner already where you are?

I haven't had canned lentil soup in a couple of years. I might buy it on sale this weekend. I had a ham and cheese sandwich with ham salad.

I make lentil soup from scratch, soaking the lentils first and all the rest of the story.

@KristenH I love lentils. And I soak a whole kilo and cook them with no salt and a bit of milk for 10 minutes in my pressure cooker. Then I freeze them in batches for 2 people. When I want them, I thaw them and add the rest of the ingredients.
