Ready to start holiday baking! ...well, almost

As they say, we're on the home stretch with the kitchen. Should be finished enough in a couple of days that I can start my baking for Christmas. I always bake chocolate mint squares (sort of a very rich brownie with a vanilla cream frosting on top, then a thin layer of bittersweet chocolate on top.) I only make them at Christmas and they freeze well, so I can make them early. Also plan to make sugared peanuts. They can be frozen too, so it's nice to be able to get them done before Christmas. Some years I make chocolate nut fudge or candy cane fudge, but I end up eating most of it! I'll probably make pecan balls if I have time. They are sometimes called Russian tea cookies, Mexican wedding cookies, or shortbread balls. I love reading what other myLotters around the world are cooking during the holidays. We're a very extraordinary crowd, aren't we?!

That all sounds so yummy! Good idea to make things that can be frozen. And yah, in this house if we don't give food stuff away asap, they will get eaten up! I wish we could have a mylot holiday potluck . . . that would be fantastic!!

Wouldn't that be wonderful? Think of all the dishes we could try from all over the world! Count me in. Of course, I vote that we have it in NC.

@1creekgirl We are in CA! Hmmm, yah, I guess determining the location might be difficult, but hey, we can change it every year - do all that traveling - and eating!

What are sugared Peanuts? I am thinking of making some fudge this Christmas and giving some to my son and daughter as a treat to take home with them.

How about I trade you some sugared peanuts for some fudge! I use shelled peanuts with the hulls still on, boil them in sugared water, stirring constantly until the water boils away and you're left with peanuts that are coated in sugar. Then I bake them until they are done inside.They make a yummy snack.

That sounds delicious! Unfortunately, I'm not baking this year as I can no longer stand for more than a minute or so without pain. I'm passing my family Christmas recipes on to my daughter in law and she can be the baker--or not. One of the recipes is for a cookie I've never seen anywhere else but in my family and my mom was making them 70 years ago before I was even born. There are some simple cookies I might be able to manage doing most of the work at a table but we'll see. I used to love baking at Christmas!

I know the kids and I want to make lot's of different cookies. Chocolate chip, shortbread cookies and sugar cookies. Plus we will make brownie's too. =)

i'm so delighted to read that'cher kitchen'll soon be'n workin' order. what a relief fer this time 'f year. i fear i've been most lax to make any treats, e'en though i ought to get off my duff'n do such. my family aint very big'n sweets, but there's to be some visitors here soon who seem to 'ppreciate such.

@1creekgirl uhm, i dunno? i'd a gazillion plans 'n now jest stare 't recipes 'n wonder if'n i can manage to pull any off, lol. last time i made my chocolate gingerbread we'd a power outage right'n the midst 'f 't bakin'...ruined, though such still smelled divine :)

I cannot think about cooking until everything is bought and ordered, so that is what I am doing now. But I expect to cook next week and cannot wait. I am so ready to get in there and have a ton of fun baking up a storm.
