What To Cook???

I am always cooking Dinner but my husband let me have a break the last couple of days now I am back to my turn and I have no Ideal what to cook for Dinner I am so sick of beef once again. He made some type of meat Yesterday and it was so so good but needless to say he made a huge mess!
But I cleaned it up. But today I want something for dinner but do not want to use any meat at all! I was thinking maybe I can make potato tacos like he showed me before. But then again I want to make something he will be able to take to work with him but there is no microwave where he works well there is but he said it was so nasty he won't use it! So I need to find something he can eat without a microwave but what? Ugh!! Any ideals? He always takes fruit, chips or Graham crackers and sometimes like today peanut butter and jelly sandwiches and I know he will be so hungry when he gets home.Ugh!! I will be making a cake soon but I need something for him for dinner?????

That's okay I figured it out I am going to try to make Pozole a Mexican soup.
