Broccoli and Stilton soup .... yummy

After my success a few days ago with Carrot and Coriander soup for my Mum I decided that I would make some Broccoli and Stilton soup.
Well, it was absolutely scrummy. I will certainly be making it again and more of it next time.
Even just as broccoli soup ( before the cheese was added ) it was amazing.
Certainly it will help when I try to eat healthily next year ( once all the Christmas goodies have been eaten !)
What is your favourite soup ? Do you make it yourself ?

Yum, two of my favourite things. If I made this I'd have to eat it all up by myself because they are two of Husband's least favourite things!

Broccoli and Stilton is one of my favourites, too. I find that a whole head of broccoli (stalks and all, chopped so it will cook in about 20 mins, of course) is necessary. I reserve about a cupful of the tiny green florets trimmed from the best of the top. Then I blitz the rest with the Stilton and add the garnish about a minute before serving.
If you don't want it to be so cholesterol-laden, you can use different cheeses, such as cheddar. or goat's cheese. Caerphilly has a nice acidity which goes well with the slight sweetness of the broccoli and coconut milk or cream can make the mouth-feel smoother (and it also changes the flavour, of course, but in a pleasant and interesting way).
