I had my artichokes last night, and tonight it will be the mushrooms.
On the menu:
Stir-fry my stepmom used to make. She called it Chinese stir-fry, but it kind of wasn't, because it had ground beef in it. I have never known too many Chinese dishes that had ground beef in it. But boy is it good!
Cooking Instructions:
*First saute some chopped onions, and baby portabella mushrooms in some olive oil.
*Once the onions, and mushrooms are slightly crispy, you add the ground beef. I get the 85% lean meat. Over the years, I have found the dishes to be much more flavorful if you get the extra fat in it.
*After beef is fully cooked, add shredded cabbage, and carrots to the mixture, with a drizzle of olive oil, and soy sauce to taste. Cook the cabbage, and carrots down until they are slightly al dente. Add more soy sauce if needed.
*Salt is not needed if you use regular soy sauce. However, I use the low sodium soy sauce, so more might be needed, depending upon preference.
*Add a scoop of this deliciousness on a bed of cooked rice. Top with another drizzle of soy sauce, and/or green onions for garnish, if desired.

I have seen meatballs on Chinese buffets. It is the only ground beef I have ever seen though... So they might be a Chinese dish.
