Have you ever heard of Tocino?

We have this dish in the Philippines called Tocino. Basically, it is similar to sweetened ham and it is usually served with rice and egg during breakfast. It is my favorite breakfast dish although it is not considered as healthy food. Attached is a photo of the tocino my dad cooked for me earlier.

Tocino means bacon in Spanish - in other words, cured pork meat. In many countries with a Spanish history, 'tocino' refers to small pieces of fat pork which are usually cured in a salt/saltpetre solution and are used in a similar way to lardons are used in many Western cuisines - fried crisp and used as a garnish or a condiment in other dishes. The way that you make it in the Philippines is rather different, it seems, and has quite a lot of sugar and pineapple juice, As you say, it's not a 'healthy' food but sounds very good, nonetheless!

@lealuvy2j I have never seen it here, even in our local shop which stocks quite a lot of Indian and Philippino ingredients (we have quite a large number of both Indian and Philippino residents in Cambridge).

That's exactly it. As far as I know there is tocino flavored Spam, Im not sure though if it is sold also outside of the Philippines.

I love that but since it is not a healthy food, my mother buys it occasionally. You gave me an idea, I will just let my mother make one at home to avoid those preservatives. Hihihi

I eat it with some spicy vinegar and fried rice. Not too much though as it is high in cholesterol.

We call tocino what in English is called bacon. It has a delicious and unhealthy fat.
