dinner tonight -- Cowgirl Beans

I've seen this recipe listed as both Cowboy Beans and Cowgirl Beans, and I'm not sure which name is more accurate. It's a good way to stretch a pound of ground beef to feed a large family, plus it helps me use up the leftover baked beans I have in the fridge.
The recipe I'm using comes from the Hillbilly Housewife website, and has browned ground beef with garlic and onions, simmered together with tomato sauce, vinegar, Worcestershire sauce, and 3 cups of baked beans. I'm roasting some carrots and Brussels sprouts in the oven and making a pot of brown rice to go with it all.

Quite a few ingredients there. Must taste great, surely. Ours is simple today Egg curry and jack fruit vegetable.

I've never eaten jackfruit! I've seen it in the produce markets around here sometimes, but have never gotten around to trying it. I have no idea how to tell if it's ripe or how to prepare it.

@spiderdust I have three jackfruit trees which are now laden with fruit. I am sure they would be cleaned and not sold as whole, if I am right.

A lot of times "veal" may just be pork. My grandma used to make "veal patties" all the time from slices of pork tenderloin.

baked beans is usually the meal or dish of the cowboys in movies. the actors (like Clint Eastwood in The Good, The Bad, and The Ugly) would open a can of beans and cook them in open fire, and eat it with much gusto. i like how they munch with the big piece of bread and the beans.
maybe beans is for cowboys?
