April crockpot report card

Well it's officially May and April ended last night. Here's my monthly review of what I've slow cooked and how it turned out. Then I'll tell you what I've gotten planned to make this month. 1. Crockpot Chocolate Lava Cake (Redemption)-F. Once again, I've missed the mark and it came out as another flop. I've smoothed out the ingredients and cut them in half for my crockpot. Another wet mess. So I hope that the third time is the charm this mid-summer with the baking cocoa I bought at Aldi's last month. I've scrapped leftovers once again. 2. Crockpot French Toast Casserole--A. Although I had trouble slicing and then cubing the baguette with a regular steak knife, I've used half of the bread and cut it into small pieces. Also my butter mixture came out burnt and rough, probably because of too much butter (like with the Riz Chicken coating.) A nice treat. Leftovers weren't too bad either. 3. Crockpot Lil Smokies--A plus. A real simple recipe and easy to make. It wasn't too bad for an appetizer dish. I have plenty leftover for a second meal and plenty in the package for another round. 4. Crockpot Chicken and Dumplings--A plus. I've made this meal a little over a week ago. It was amazing and filling for a big meal. Although mine didn't look like it did in the photo, I would have to use different biscuits the next time around, though with Grands it came out okay. Leftovers were filling too. 5. Crockpot No-Boil Manicotti--A. Although I made this a week ago, I had forgotten to add the seasonings to the filling, and also I had trouble piping the noodles. I've used only 3 for my crockpot and had half for main meal and leftovers. I've substituted ground beef with ground turkey. 6. Crockpot Stuffed Pepper Soup-A. Just like when I had it at church for Lent, it did have a spicy kick to it from the diced tomatoes with roasted garlic and onion. I also had run out of fresh onions and the diced tomatoes and the onion powder had compensated for the loss. I also used ground turkey instead of ground beef. It came out okay. I do have leftovers to have on Wednesday. Now here's where my menu for this month. All simple and easy to make this month with few ingredients, starting next week. 1. Mushroom Bacon Swiss Chicken (Recipes that Crock/Pinterest) 2. Chicken Parmesan (Although I had made this last year pre-crockpot, I hope it tastes the same) {Recipes that Crock//Pinterest) 3. Hot Turkey Sandwiches with Pasta Caprese Salad {no slow cooking for the salad--Recipes that Crock) 4.Crockpot Fudge Brownies (Recipes that Crock). Bon appetite!

I'm glad most of your recipes came out and you enjoyed them. Was the chicken and dumplings the one I shared with you on FB? If so I am glad you liked them I was wondering how they turned out. I knew when you was making them and was waiting on you to tell me how they turned out. I can't wait to go along the journey with you this month to hear how the meals turn out. They sound great!

@KristenH Your welcome. If I recall correctly, which don't rely on my memory right now I think you mentioned in another discussion that you were fixing the one I shared with you from Pinterest. But I am not for certain. lol. any way glad you enjoyed it now to perfect that darn lava cake. That thing has been a challenge and a half!

You sure do have a lot of variety in your meals Kristen. I think its super! Our meals are so mundane comparatively. But we just are fine with it. Crockpots are so handy.

Yes they are. I'm getting used to my 1.5- quart crockpot. It does need a cleaning this week. Well variety is the spice of life.
