I have so many green tomatoes, I only hope I get to eat them when they are ripe.

I am having anticipation anxiety. I discovered over the past few days of backyard garden inspection that, to my amazement, I have many new green tomatoes on their vines. But, I am wondering, how long before I can harvest myself enough to enjoy some home made salsa or even something as basic as a tomato sandwich on rye with a little mayo and salt and pepper? The bird netting has done a good job keeping out the grackles and other birds that seem to frequent the back yard. I managed to keep the tomato plants out of harms way, so to speak, but frankly, could the squirrels be laying in wait, for when those tomatoes ripen to perfection? I hope I beat them to the punch. The taste of backyard tomatoes beat the pants off those sold at the store.
Tomatoes are the most popular garden vegetable crop in Texas. They are a good source of vitamin A and fair source of vitamin C.

So, I planted mine back in April. It seems to take forever for them to fully mature and grow but I think it is what patience is all about.

Green tomatoes would be dredged in cornbread and fried in healthy oil by now. And I love fresh ripe tomatoes.
