Non-Refrigerated Tofu?

I never thought I would be someone that fel in love with tofu but it happened when I lived in California. Panda Express had an amazing Chinese eggplant and tofu stir fry in garlic sauce; they added red and green bell peppers (which I can't stand) but I was there so often that they knew I didn't want those added to the mix. While it might have irked some of the lazy people, it insured that I would get a totally fresh meal.
There are several places that make and sell their own tofu; for .35 cents a block it's a steal but getting there can be tough because of traffic and limited parking. The stuff sold at grocery stores is overpriced and even though there is a “best by” date on it, it never has the same taste or mouthfeel to it.
Someone told me about Mori-Nu Silken Tofu and that it didn't need to be refrigerated. I saw it on a couple of websites and decided to order a couple blocks to try it out. I get wicked craving for the stuff and love to cube it and add it to soup. For about $1.50 a block it wasn't bad; I am glad I got the extra firm and chances are I will buy this just to have it in the house without worrying about it drying out in the refrigerator. You do have to refrigerate it after you open it but as long as its sealed it can be stored almost anywhere.
Depending on how you are cooking it, it's comparable to regular fresh tofu. High in protein and capable of being cooked a multitude of ways, it's a nice alternative to protein shakes and bars as well as to have for camping or hiking.
