First time cooking flat noodles

My son loves stir fry flat noodles which is also fondly known as Char Kway Teow locally. He would definitely order a plate of non spicy, non cockles Char kway teow when he dines out. However he dislikes the bean sprouts. He asked whether I could cook the same dish at home.
Hence, today I decided to try to cook this flat noodles for the first time. I had found a couple of recipes online with different ways and ingredients plus the different sauces used for each different website. I am confused now. Why aren't Char kway teow recipes the same ?
Anyway, I will upload the photo later, please let me know what you think of it.

it's ok. Noodles is yellow round long noodles. Flat noodles are white rectangular long flat noodles. Not common in India but China and Malaysia, yes
