I'm a Filipino and I hope I'm just as entitled to reply to hour post. I love green mango and bagoong. Here in Thailand we seldom find sour mango as they are almost all genetically modified. Gladly, my apartment has mango trees which are not GM and I really enjoy picking the fruits and dip them in bagoong.

If some will read you discussion who are not Filipino, they will probably don't understand the term "bagoong". I'm Filipino too but will still ask you what type of bagoong you are referring too. Could it be "bagoong alamang" one that is made from tiny shrimps or "bagoong isda" well you know it already. Then what variety of green mangoes? Is it Indian or the Carabao one? If its Indian mango I would prefer "bagoong alamang" if the latter, "bagoong isda" will fit more.

lol! you got me there. forgot that we also call a dish by different names, depending on our location. well, here in cebu, we call bagoong, hipon or uyap. it's actually bagoong alamang. i'm not familiar with bagoong isda, though. is it something like dried, salted fish? as for green mangoes, all of those mentioned will do. and, don't forget the apple mango variety, too. now, you've got my salivary glands working.....
