Curry with Fresh Green Leaves (Amaranth Red) for my Lunch

Searched thoroughly to prepare something for lunch. The fridge is empty. There are no veggies. There in the corner, I found some fresh green leaves. I kept them neatly in a polythene cover. So this must be my dish for lunch. Took them out and cut into small pieces. Green chilies are there. Took 2 green chilies and cut them vertically. A glass of Tur Dal is kept along with the green leaves in a container Added 2 pinches of table salt. Allowed it to boil.. After two whistles transferred it to the container on the stove. It was already having the mix of fried curry leaves, mustard seeds, turmeric, Asafoetida. These two were again kept on the Sim. After 10 minutes added tamarind juice and again boiled for 5 minutes. Added some Red Chilli powder along with some salt. The proportion is exact. The dish is very tasty. This is the item (Dal of Amaranth Red) for my lunch for today. How about you all?

My lunch is alway that prepared by the office. We never know what it consists of. However, we make do with what is given since it's free lunch in the office.

If this is a lunch provided by the office, then you should be more careful. Of course, they take every care. But, we should see and watch if any stale food item is served. That much.

I know curry plays a main role in your diet. We also have some curry dish, such as curry with potatoes and beef. But we have no dish to cook green leaves vegetables with curry. But I don't mind trying it

Very interesting. My Indian friends took time explaining to me about making curries with veggies, but they never told me about having green leaves as an ingredient. Thanks for this.
