Petis is a component in Indonesian cuisine that is made from a side product of processed food (usually from pindang ikan, kupang, or shrimp) which is heated until the liquid becomes thick like a thicker sauce. In further processing, paste plus caramel sugar shells. This causes the color to become brown and tends to be black and tastes sweet. Petis is usually used as a food flavoring ingredient.
Petis are commonly used as seasoning on some foods such as Java rujak (cingur, gobet, manis), kupang lontong (Sidoarjo), semanggi (Surabaya), lontong racing (Wonokromo, Surabaya), Mixed Tofu and Tahu Tek (Lamongan ), or campor (Madura). Tofu tofu in Surabaya includes favorite dishes.
Anyone ever taste it here and also like it?

Wish I could taste that Petis, our kind of tofu is almost very similar, it's called " tokwa" here., we do not have petis so we just mix it with vinegar, soy sauce, minced fresh onions and garlic and a dash of ground pepper.

my sister-in-law has a petis making business like this on cirebon, and it feels great
