Making pickles with zucchini.

Normally I have either bought or made dill pickles with small cucumbers. And then I use many of those dill pickles dicing them for a wonderful potato salad. Last week, I did not have dill pickles and I was not going to go to the supermarket for that. I did have my zucchini pickle in the fridge and I thought that maybe that could be used instead. It was delicious! Where I live, normal zucchini are a lot cheaper than small cucumbers. So, why spend that money when you can do better with what you have at home? End of dill pickles here. I´m starting a revision of my budget and have to spend less and live as well. Here´s one idea.

Thanks for your posts! Our recipe is pretty same, but for zucchini, we use olive oil only

Actually, I should make it with just olive oil. But I use sunflower oil to fry the zucchini and caramelize the onion. The rest of the recipe is done with olive oil.

I have never eaten pickles made of zucchini. Sounds delicious.
