I want to eat the dish but I always try to avoid every time there is a serving of it.
Fish "Kinilaw" is a Filipino dish from raw cubes or slices of fish season with mixture of vinegar, spices and other flavors to enhance its taste.
It’s a favorite of many and always a crowd drawer when serve during occasions.
I just can’t enjoy its deliciousness and flavors because the strong taste of chili is killing my taste buds.
Lately, I was invited to a birthday dinner of my friend. There, a serving of Kinilaw was offered which likened and earned praises by other companions during that dinner. I was curious so I grabbed a piece and munched a little. For the first time, I add some more because it’s not too hot and I was able to tolerate its hotness. I would say that it was prepared and seasoned well.
I think I could do the dish in the future with less chili which suited best to my taste buds.

Kilawen doesn't always require chili in my place.
But when it comes to fish kilawen-- the best kilawen are meat of oriles or yellow fin tuna, buslogan or blue fin and most of all is the susay or blue marlin.

@ilocosboy those fish species are a little pricey but they are the best for kinilaw. In our place we can make do with tamban, tawiles or kabawkabaw.

I heard about it but we don`t eat something like that instead "paksiw na isda" which had the same style but boiled with vinegar, ginger and salt

Am very choosy when it comes to kinilaw. In only like those spiced with tabon tabon (fruit from a tree) I do not like if they put milk or mayo or cocomilk, I got no problem with chilis I can tolerate them.
