Spinach Lasagna - Have you ever tried it?

Here is my sister's recipe. It is simple and very good.
1 (26 oz) jar spaghetti sauce
2 (8 oz) cans tomato sauce
2 eggs, beaten
1 (16 oz) carton cottage cheese
1 (10 oz) pkg. frozen chopped spinach, thawed and drained.
1/2 c. grated parmesan
pinch of nutmeg (optional)
12 lasagna noodles
2 c. shredded mozzarella
Preheat oven to 350 degrees. Combine spaghetti sauce and tomato sauce in a bowl, set aside.
In another bowl, combine eggs, cottage cheese, spinach, nutmeg and 1/4 c. of the parmesan cheese, stirring well.
Lightly grease 9 x 13 baking pan, cover botom with a thin layer of sauce mixture. Layer remaining ingredients in this order: uncooked noodles,
followed by spinach mixture, mozzarella, then a layer of sauce.
Repeat twice and sprinkle with remaining parmesan.
Cover and bake for 1 hour.
Let stand for 10 minutes before cutting.
Give this a try....you won't regret it.

Actually, spinach/veggie lasagna is the best dang lasagna out there!!! I posted to another discussion yesterday that I make the best veggie lasagna the has spinach, carrots, peas, and even lima beans that you don't taste! My kids have no problem eating their veggies in the lasagna!!!
I make mine very similar to yours...and I don't use ricotta either...I don't like it. Cottage cheese is much better!!!! But I must say, I have never used nutmeg...I will have to try it next time!

We have a vegetarian in the house so vegetarian recipe's are always appreciated - and who can resist a good lasagne ... YUM!
