Salsa chicken with rice

I found a new way to make chicken and it's actually quite good and super easy. My daughter had thawed some breasts to make a casserole she never got to. So I went online to find a way to incorporate some of her ingredients and an abundance of salsa I had on hand. What I ended up doing was putting raw rice in a small casserole dish and adding chicken broth (2 parts broth to 1 part rice) followed by the chicken breast. I sprinkled taco seasoning over them and then covered them with salsa. Then I closed them up with aluminum foil and put them in a 375" oven for 40 minutes. I took off the foil and sprinkled grated cheese (cheddar jack mix) and put them back in the oven and turned it off. The heat already in the oven melted the cheese. I then cut one of the breast up and put the pieces plus rice in a tortilla. I realized then that I had forgotten to add salt and pepper. The second one was much better, but both were very good. Quick and easy to put together, this would make a great meal for busy families. And, most of us here in the US have these things in our fridges and pantries. The salsas I use are mild, so no one needs to be afraid to try this. You can also add sour cream if you want when you eat it. I've included a photo of a very similar dish with a link to that recipe. @jerzgirl except for the 2 over 70 here once in a while i just tell them to make sandwiches or something.more people need to cook in this house.

I just have one to worry about and she usually doesn't eat anything I make. I like rice, she doesn't. I like ham, she doesn't. I like BBQ sauce with grilled meats, she can't even stand the smell. So, I pretty much just cook for just me.
