Tried new recipe with fresh fennel

Does anyone else use fresh Fennel for any recipes? I would like to hear about it. It is a root/herb that is usually dried in a spice but you an also buy it fresh (I had to go to Lund’s/Byerlys- a more upscale grocery store to find it). It smells almost like black licorice or anise. I was too chicken to try a piece of the bulb before it was cooked. After it cookes it tasted like an onion with an extra taste to it. I made a recipe that turned out awesome! It was a. Home made soup, using vegetable broth, diced tomatoes, Cannellini beans,sautéed fennel, with red pepper flakes, smoked paprika, and dried basil. AND shredded collard greens. (I had attempted to eat these in a salad and it was NOT good). It turned out fabulous though and I think I will have to write it down in my book of healthy recipe favorites. Beyond that, I have never used fennel. I don’t even know what flavors and things would go with it. Have you ever cooked with fennel? Or have you tried any new recipes lately that wowed you?

I work in a large family owned chain in the midwest and we've sold fresh fennel for years. I've been hesitant to try it because I knew it smelled like anise or black licorice which I don't like. Were you able to pick up on that particular taste after cooking it? People might use that with fish like they use dill, but I'm not sure. When I'm interested in a food that people buy I will ask how they use it, but that wasn't ever one I thought I would try.

@responsiveme maybe like we would use a sprig of parsley to freshen the breath after eating? If you only use a pinch or small amount of the fennel, I can't imagine it does that much good if you have heart burn or something related to what you ate.

I have used fennel a time or two when making a special recipie. You are right, it is a little hard to find, but out there. I think I actually found some at Walmart, but not sure. It has been awhile since I used it.

Oh! I had looked at my Walmart and hadn’t seen it. I am kind of intrigued by it..what a strange taste/aroma!
