Hector and Marta invited me some time ago to Chinese food. She ordered flambeed eggplants. The only thing I could notice was that they were delicious and surrounded by flames when they reached the table.
So I started my invention.
I peeled them because the peel is tough. And sliced them in an aluminum foil after I marinated them with marine salt, coarse pepper and jerk. As I was about to fold the aluminum, I decided to put some slices of sweet pepper and some of hot pepper. Then I added plenty of olive oil and to the oven.
I wonder what will become of this! Should I flambeé them with white wine, with cognac or with something else? I am waiting to see how it will be. Should I have some soy sauce nearby?

I did the first one. flambeed. I have more and I´ll make a moussaka.

@WiseGhots I had some delicious ones. I flambéed it after it was cooked with an awesome French cognac I have.
