What's For Dinner? Lasagna!

I spent the afternoon visiting one of my daughters and grandchildren. I didn't get home until after 7 pm. So that left me with a hungry husband who wanted dinner very soon. I decided to pull out a frozen lasagna and pop it in the microwave. I usually cook these in the oven in the winter but it was too hot to heat the kitchen up so opted for the fastest way to cook it, the microwave. I usually keep a couple of options for a fast dinner at the house for whenever he works late, we are late getting home or whatever reason. Frozen lasagna is not as good as homemade, but it isn't that bad. I added some brussels sprouts to the menu and we had a fast and yummy meal with very little effort put forth. Thank you Stouffer's. I had a bowl of cream of potato soup. I just eat granola bars or yogurt for a quick meal.

My husband and I made our own homemade shrimp scampi. It was sooooo good that I don't think I will ever order it on any menu at any restaurant - at least not anytime soon.

I enjoy lasagna, even the frozen stuff. My emergency go-to might be Andersen's pea soup or frozen Chinese from Trader Joe's.

I've had Stouffer's lasagna and it's pretty good. I wouldn't add the brussels sprouts, but that's me. My go-to is eggs. My dinner and supper yesterday was the pot roast I cooked up in the crockpot.

My hubby likes only a few vegetables. Oddly, that is one of them. I get tired of green beans, which he never gets tired of. He likes corn, green peas, brussels sprouts and seldom broccoli and cabbage.

Your lasagna sounds good. I also keep frozen foods around. Today was not one of my hungry days so I just had some rice and beans.

We haven't done the Salisbury steaks in a while. It's time for me to pick some up. The man likes those. I like mashed potatoes and gravy to go with it.
