MMMMMM, Zucchini!

Oh, this was wonderful! My mother had a bumper crop of zucchinis this year, and every time she comes to town, she brings us a BIG one! Tonight my husband got creative. He sliced off four thick slices of zucchini, coated it in bread crumbs, and tossed it in the frying pan, after frying up a couple of marinated shrimp kebabs. Honestly, it was one of the tastiest things I've ever eaten, and I look forwarded to being blessed with many more wonderful meals like this, My husband is the BEST cook in the world, and that's one of the reasons why we are still on our honeymoon, 12 years in.
Do you have any creative ways to cook zucchini?

That picture looks delicious. It makes me want to walk right in and eat it all up.
The only thing I've ever done with zucchini is to cut it in half and put olive oil, parmesean and seasoning salt on it then pop it in the oven for a bit.

That pic makes me want more. LOL I'm glad I'm not the only one who gets hungry looking at it. Your idea is a good one!!! May I suggest adding some ground sausage, or other ground meat as stuffing? Hubby does something similar with sausage. Yummy!

@ScribbledAdNauseum It sure would, and it would round out your meal too. Meat, veggies, maybe a bit of cheese, all in one place.

I blanch zucchinis, halve then and spoon off the interior. I take away the excess liquid, beat eggs and make fried diced onions with spices. I mix all that with the zucchini, add Parmesan cheese, fill the exterior and bake in the oven

Sure looks good! I cook mine simply with butter then thicken the sauce with corn starch.
