Cooking up some Fries

Last night I had some hot dogs and fries. My french fries were home made fries instead of store bought ones out of the freezer.
I was wanting some fries but I didn't have any in the freezer and didn't want to drive to the store, but I had a bag of potatoes. The thing is, I had tried to make fries before and they always came out limp. They really weren't all that good.
So last night I looked up how to fry french fries. Lord I never knew there was all that work just to get them crisp! While there were some people that coats the potatoes in a batter, I followed the directions that calls for you to fry them 2 times.
According to this chief, you cut then dry the potatoes, fry them at 300 degrees for a little bit, take them out then fry them at 375 for a little bit.
It did work, the fries taste good and were also crispy! So now I know want to do if I ever run out of fries again.
Do you ever cook home made fries? If so, how do they turn out?

Thats my problem, it's just me, so it don't take much of them. I guess that is why I just buy them most of the time.

I forgot to say that you fry them around three or four mins. on each temperature. Good luck, hope they turn out good when you try it.

That is what I would like to have. I had to cut all them with a knife.

We never buy ready-made fries. I want the potatoes that we peel and slice.

@JohnRoberts Sounds like me with some of the things I ate when I was young. I know there are things that I ate when I was younger that taste different to me now. I don't know if your taste buds changes or what.
