What's in the Sauce?

I have worked a lot of years as a cook. Every position from a server, to a dishwasher and lunch lady to fry cook. If it has anything to with food, it's a safe bet that I've done it. Most of the time when I've cooked something a couple of times, it will be in my head. No recipe needed. Years ago I worked for a catering company that also had a boutique that served lunches. Higher-end stuff for my area of the world. During the holidays it got straight crazy. Like go and hide in the freezer and scream crazy. People just didn't want to cook their own food. they were coming in and spending sixty bucks on a ham that cost us ten. This is one of the reasons I ended up leaving this company. It became apparent that this owner was perfectly fine with me spending right up to Christmas day cooking for her customers. Twelve to sixteen-hour days. I wasn't even able to cook at home for my family. And when it came time for bonuses because she had made so much money. She decided the cooks didn't merit one. The waitresses that got to leave every day at three, they got a hundred dollar bill. The bakers that usually stayed right along with me got a hundred. Even the dishwasher got a bonus. I don't understand how someone can be such an ass. I worked my tail off. It wore me out physically and mentally. Not to mention the other cook position wasn't filled but that wasn't for the lack of her hiring and expecting me to train ten different people. I guess it was my fault for going too far in my loyalties. Thinking my hard work would pay off. I should have known seeing how none of the applicants came back after one or two days. But, anyhow that wasn't what I was going to say. We served mainly freshly made daily salads. One of the bestsellers was a fruit salad. With it, we served an orange yogurt dressing. We had to make the dressing and for the life of me, I can not recreate it. It had a lot of sugar, orange juice, orange zest, and before it was sent out I would mix equal parts of this and yogurt together. If any of you nice folk posting recipes have any such recipes could help me figure this out I sure would be thankful. That's what I was wanting to post about. Sorry bout the rant.

@madgreer77 I take it you like the restaurant business. You needed to vent. I hope you feel better after venting.

Thank You and yeah It's more about being treated humanely. But the dressing is very good. I'm afraid it was the owner's original sauce.

I`m not a cook but I only make simple salad dressings like some oil, salt, pepper, apple cider vinegar then mix it well You are a great cook. I know that owner must understand that what she`s doing is wrong, Chefs are important human power in every restaurant

Good problelm no problem with the rant there.I loved reading this. Never put anything on my fruit salad.I get all the flavor from the fruits. Thank you for an interesting post and very nice to meet you Have a good day
