Sweet potato for dinner tonight.

A while ago (maybe a week?) someone gave me a couple of huge sweet potatoes. I had never cooked them before, but I figured I'd better try before they went bad. I baked them both, and had one for dinner tonight. I left them in a little longer than what the instructions I found said, because, like I said, they were pretty huge. The one pictured is half-eaten. It was pretty tasty. I'll probably wind up having the other one for lunch or dinner tomorrow.

@xstitcher try it someday may be you like it. People avoid frying because of the heavy cholesterol in the oil

Many ways to cook sweet potatoes but the simplest is to drop them into a pot of boiling water. I also like them with butter.
