Fireworks in a jar

So today me and the kids tried and experiment that had to do with water, vegetables oil, and food coloring. It was something easy that me and the kids could do together and also I had everything already here in the house. So first I filled my mason jar to 3/4 of water. In a small container I added 4 tablespoons of oil and then several 5 drops each of a few different color of food coloring. Once all the food coloring was added I took a spoon and strides making more smaller droplets of food coloring. Then poured that into the water. What do you think happened next? The food coloring droplets started to sink to the bottom and try to go back up to the oil. After that I asked the kids a few question on why they thought that happened.
