BBQ Quinoa Tofu Bowls

I thought it would be fun / a nice distraction to document some different recipes I have been trying while "social distancing". Just kidding, I always like to post them, and I always like to try new recipes.
I TOTALLY took a break from using quinoa after getting burnt out from it, but I gave it a try since I had some tofu sitting around and wanted something quasi-healthy but still hearty.
What I came up with was: barbeque tofu quinoa bowls. In it, I roasted sweet potatoes and tofu in a korean barbeque sauce, fried broccoli and onions, and put them all over quinoa with a drizzle of regular barbeque sauce. Then topped with green onions.
I forgot HOW MUCH I LOVE barbeque sauce! Being a vegetarian, I don't find myself eating it very often at all. I am definitely going to try to incorporate it more in other foods. Maybe I will scramble up some eggs and season it with barbeque sauce. Who knows?
This was not a terribly expensive meal, I fed three people with it and got 2 lunches out of it also. Next time, I might just bake/roast ALL the ingredients to save on dishes. The tofu was still soft and not crispy (I have never managed to make that perfect crispy on-the-outside-soft-on-the-inside tofu, YET).
It was good, and I would suggest it if you are looking for something almost entirely vegan, but still hearty and delicious.

That does look tasty, I do want to do the flip toss, do it fun and needs it.
