Vegetable Soup Night

Happy Tuesday all. Hope everyone remains safe and healthy. So far so good in my family. I have been trying to consolidate my grocery shopping trips, to have some “go to” recipes that don’t require a lot of perishables. I love eating fresh fruits and veggies but need to also take it down a notch. If it comes in a box or can, I can buy it ahead of time and have it shipped. Anyway. Not sure where my brain is at. I have still been working full time, but they have cut down on overtime, undergone a hiring freeze for all of 2020, and the future remains uncertain. Food and cooking have been a great distraction for me, and giving me something to occupy my time. I have been making big batches of soup and dropping them off at my moms and my dads houses. This is my last batch of relatively cheap-to-make soup: veggie broth with potatoes, carrots, celery, frozen corn, peas, green beans and diced tomatoes. With some Saltine crackers on the side-delicious! On that note, someone gave me a recipe for a different type of vegetable-bean soup. The ingredients were super cheap so I decided I will be making that tomorrow. What have you been cooking lately? Anyone else trying to be more frugal with meal choices? Yes I have, the past 2 weeks I have not cooked the same meal twice, except for eggs.

Cooking? What’s that? I’m still microwaving things and making matzoh pizza with chunky Ragu spaghetti sauce.

But whyyy lol. Actually as far as not leaving the home, non-perishables are the way to go. I am a vegetarian and eat a lot of fresh veggies and fruit.....and I like to cook. Ha.

@maezee That is nice that you want to share your soup with them. I have glad you have a distraction. I made chicken in the crockpot but that is for the Jewish Sabbath. I make the main meal ahead of time and put it in the freezer till the next time I need one.

I am frugal with all my meals I can whip up a meal around anything one time I was at my aunties I made a whole meal out of spaghetti Vienna sausages canned corn onions and mushrooms fixing too make something similar tonight.

That looks delicious. I made a vegetable soup the other day using a can of marinara sauce as the base. I think, if anything, we are spending less on groceries because we started stoking up last month. Now we are just buying things like drinks that we enjoy.

We make taco wraps with shredded chicken or hamburger and diced tomatos, onion, avacado, refried beans, chopped olives, shredded lettuce, grated cheese, sour cream. Take Tortilla wrap put whatever we want of the diced food into the wrap, fold it on top and bottom heat in microwave for 1 minute and it is a tasty healthy meal and stretches, We also make Chili beans with diced tomatos, chopped onion, chili and other spices and beans and have bread and butter or homemade rolls. We make homemade chicken noodle soup with diced chicken cooked, parsley, diced carrots, diced onions, and garlic with noodles. Stews we put in diced up beef, diced onion, celery, potato, diced carrots maybe peas, mushrooms and add 1 cup of barley we feed 9 people with these type meals. We have other things for breakfast and often have soup and sandwiches. We cook mostly from scratch. We also use rice for other dishes like spanish rice or a stir fry with veggies and add chicken or beef etc. 5 of us take turns cooking.

That soup looks delicious. I guess everyone is trying their culinary skills in this lockdown period. Good food is always a good way to distract and feel good. Inspired by you, I might make a good vegetables soup for my family tomorrow.
