tonight's dinner -- using up the leftovers

I think the last of the Easter leftovers (except for the turkey stock that we made from the carcass yesterday) are finally eaten.
I made meatloaf for dinner and used up the leftover stuffing as the binder instead of using breadcrumbs or oatmeal. I also formed the last of the funeral potatoes into patties, dredged them in a little seasoned flour, and "oven fried" them on a sheet pan during the last 20 minutes of baking the meatloaf.
I steamed some green beans that I got from this week's produce delivery and made up some kale salad (a bagged mix which the kids willingly tried, but I want to reverse engineer sometime soon), put out the requisite carrot sticks, and dinner was served.

We had a mish mash dinner of leftovers! The kids had the remaining lasagna pieces from last night with baby carrots, baby spinach, and some pear pieces. Hubby had the last of the chicken piccata, baby carrots, pear, and leftover matzo ball soup (minus the matzo balls because we ate them all the other night). And I had matzo ball soup, and a leftover hot dog on a bun from lunch (I had pear and celery while heating this stuff up).

I missed out on buying ingredients to make mazto ball soup this year! Or maybe I didn't... I wonder if there's still plenty in the stores, even though Passover ended?

@spiderdust I know some stores carry the ingredients all year round. I make our own matzo meal out of the matzos since I wouldn't use the meal for anything else. And we still have matzo leftovers.

What do you have with your smoked fish? I sometimes have it with rye crispbread and cream cheese and cucumber.
