Vegetable Barley Soup

Have you ever cooked with barley before? Barley is a larger, softer version of rice (my opinion, anyway). It is a grain, high in calories but also high in fiber and protein and can easily be incorporated into an awesome vegetable soup to make it a bit more filling with extra protein and fiber. Apparently they have a "quick cook" barley and a more time consuming. I have looked online but I haven't found many recipes using barley, which is kind of surprising considering how good it is! Attached is the photo of the vegetable barley soup I made - relatively inexpensive - using a vegetable broth, diced tomatoes, diced carrots, a couple of diced potatoes, frozen green beans, and some diced white or yellow onions, in a good vegetable broth (I use a brand called Better Than Boullion, which is really salty but delicious), and two cups of cooked barley. I probably did something wrong with the barley, as it seemed like some it of it was sticking together/a little clumpy. But still overall delicious. I still have half a box of this barley and I kind of want to use it up, since I have it...on something besides soup. Do you use barley? What kind of recipes do you cook with it? Any you would suggest?

In the early times, whenever anyone got a fever in my family they ate Barley mainly Robinson Barley. I don't know why it has gone out of fashion now.

I do love vegetable soup with barley, but that is usually what I find in restaurant soups.

I made a rice pudding type of dish with barley, its been a while since I cooked any. Its starchy to me too but good. Cook it add butter. Honey, and almond milk, dash of nutmeg. Yum that is breakfast.

Interesting!!! I agree I am going to try not to eat it on the regular because it is full of calories and carbs... but I am intrigued by a sweet recipe using it!!

I never tried it. I bought a canned barley juice and i did not like its taste. it is pretty expensive here.
