Spicy peanut soup for dinner!

The recipe site I got this off of is Cookie & Kate. I bought one of her recipe books a while back because I admire her and her simple but hearty Vegetarian and vegan meals. This one I was kind of worried about trying, but I took the chance and am glad I did. The recipe in the link below does not include sweet potatoes or chickpeas, but her version in her cook book does for whatever reason.
So this soup is West African-inspired but not where near authentic. It has a creamy, peanut buttery taste with a spice, caused by the jalapeños and sriracha added to it.
The broth:
Vegetable broth, water,
And then mixed tomato paste and peanut butter
The additions:
Sautéed red and white onions, jalapeños, fried sweet potatoes, fresh grated garlic and ginger, collard greens , chickpeas and sriracha hot sauce to taste
On the top:
Cilantro and crushed peanuts
On the side:
Brown rice
Overall delicious, hearty, filling. And vegetarian! Possibly even vegan, but to be honest I can’t say for certain that the peanut butter doesn’t include some type of animal ingredient.
I need to stop cooking soups, as it IS summer now in the Midwest, but this was one of my favorites. Definitely saving the recipe for a later date.
