Homemade wine; how to make after taste much better?

I have made several homemade wine. Using grapes and also some experiment with tropical fruits (jack fruit, banana, pineapple). However there's something wrong with my final product. I feel that the wine is too dry, and after taste is not good as the wine that i bought from the shop. I have tried several method to make it better, however nothing is changes. I am not sure what is the problem, is it because of yeast ?, fermentation process?, racking?. I am not really sure. So if you have experience how make home made wine, please share.

I’ve tried preparing one for our science class before. I think it has to do with everything, the ingredients you used, the amount of yeast and how you prepare it. The most important thing I guess is how long the fermentation is??
