Good morning and happy Saturday to all! I took the day off a while ago and had not made any sort of plan so I am still trying to figure out what I will do tonight. One friend wants me to meet her at the casino nearby for a little bit. I haven’t been since COVID and the idea kind of freaks me out...
Anyway, not the point of this discussion. Two days ago I made palak paneer for the first time- it is an Indian dish made of spinach, spices with cooked cottage cheese chunks (paneer). I found a recipe online and used spinach, cashews, onions, tomatoes, a couple of green chilies, and I ended up finding a Palak Paneer spice packet at the Indian shop near by me that I used. I think I should have used more spice though- there’s a little bit but not a lot. And not enough heat! I was being conservative with the green chilies but I could have put a few more in.
I love this meal though, with a side of toasted naan. I read that some people make their OWN paneer (do you? Do tell?) But I bought a frozen bag of it, which was a little bit speedy but worth it.
Do you ever make a palak paneer or something similar? Or, what new dish have you made lately?

I love palak paneer but I let the professionals make it. My Indian colleague's husband has a fantastic Indian restaurant. Sometimes I get that. I also like biryani and kheema curry.
