Migas are so Good for Lunch

was looking at a New Mexico page and saw pictures of Migas. It is a Spanish dish that I had before but forgot about it. I made some for lunch. I don't put chile in mine but added some sweet peppers and onions. You cut tortillas into strips and cut the strips across once. Fry the veggies in hot oil, add the tortilla strips and cook it all with eggs. It is pretty good. What did you make for lunch or dinner?

It looks good. Yesterday was a late dinner. I had my usual breakfast at 4 PM.

@just4him Oh, okay. I thought that was your regular routine. Nothing wrong with that. I often eat breakfast for dinner.

@akalinus My son showed up here when he got off work yesterday morning. He thought my eye exam was in the morning instead of the afternoon. So I left without time to eat. I was hungry when I got home yesterday.

What ingredients do you put in your Migas? I used what I had. It worked out well but I should have cooked the veggies longer.

Do you mean you put the beef in the spaghetti? I have made it that way, also with meatballs or sausage. I had kids to feed and spaghetti was easy.

@akalinus I explained myself wrong, I just found out it is said Seasoned ground beef, lol. So I had spaghetti and seasoned ground beef. My bad. You know these non-native English speakers hahaah
