BBQ Quinoa Tofu Bowls

I was excited to make this “recipe” a couple days ago and wanted to share. As a vegetarian, I am not sure why I love barbecue sauce so much. Maybe it’s because I don’t often get to eat it? But I still like to incorporate it into whatever meal I can. This is a simple, relatively inexpensive meal but DID take a lot of stove burners up at once. Ingredients: -Quinoa -Fried sweet potatoes, mangoes, pineapple chunks, in a BBQ marinade -Roasted broccoli, colorful peppers, and sliced red onion (roasted, because I ran out of burners to use) -Tofu, fried with a drizzle of BBQ Delicious and healthy-ish. One day I do want to start learning more “one pot” dishes. It would probably shave hours of dish washing off my life. Make anything good lately? Trying to also get back into quinoa lately instead of rice. If you have any fun quinoa recipes, share here!
