Lumpia or Philippine egg rolls are a staple in every Filipino party. Sometimes, we just make some just because. It is usually made of ground pork or beef or both (although one can use chicken, turkey, or even tuna), onions, garlic, carrots, cabbage, jicama, and seasoning. Then we spoon out a portion and wrap in lumpia wrappers, the thin kind, and not the thick ones they sell at Walmart. These were then fried or air fried. The crispy goodness can be eaten by itself, with rice, or dipped in sweet chili sauce.
In the workplace, it is known that I make really good lumpia. I was able to bring some a few times before, and it's always a hit. Not trying to brag, but please bear in mind that I am the only one there from the Philippines, so nobody really knows how these egg rolls should taste like, so they think it's the best one they have ever had!
Because of the pandemic, it is highly discouraged to share food. So this time of the year, we cannot do our usual pot luck. I have heard comments and remarks from most of them saying they have forgotten how egg rolls taste like, and they would like to be reminded again. At first I will just shake my head, then a few of them were directly asking me if I will make and bring some soon. As much as I would want to, I cannot because I would rather that all of us are safe. They then would say they are not worried about my hygiene or cleanliness, that the germs will die when the egg rolls are cooked, and some would even say that it would be worth it.
I know they are just kidding, and I am flattered that they love my cooking. Some of the guys even tried to bribe my husband to bring the "contraband" to work for a price if ever I made this at home.

I would love those. The thin wraps are for me not the thick ones I do not like it.

That sounded more like spring rolls. Lumpia uses thin, flour wrappers and the fried after rolling the filling in. Sometimes to make the cooking faster, the meat fillings are sauteed first, then excess oil is drained. Once it has cooled down, we roll or wrap the fillings then fried so the wrapper becomes crispy.
