Made Hoppin John for Dinner

It was really good. I love how black-eyed peas thicken up. Used pork shank, it was good - threw in some thyme, a bay leaf, chopped up bell pepper, onion, garlic and some Cajun seasoning.
Ate it with some long-grain rice. Kind of glad I didn't make fish like I was thinking about doing. The Hoppin John was just completely fantastic.
