The versatile brinjal (egg plant, aubergine)

Brinjal is one of my favourite vegetables as it can be cooked in many different ways.
I cooked it yesterday in coconut milk. Make round slices (around half inch thick) of the vegetable and marinate them in chilli powder. salt and turmeric with a touch of water
You need to cook green masala - sliced onions, green chilies, tomatoes, ginger, and garlic.in the diluted coconut milk and once the stuff is cooked add spice powder and then add the thick coconut milk. Garnish it with chopped coriander leaves. and temper it with fried sliced onions. The coconut milk curry is ready.
Shallow fry the marinated brinjals and gently lower them in the curry just before eating

Yummy this sounds so absolutely delicious.
I do like eggplant but never had it like this
