The Maharastrian fenugreek leaves vada/chop

Do you take leafy vegetables? I take them a lot in winter. Like spinach, fenugreek leaves, radish leaves and so on. They act as a roughage for your gut. I therefore prepare these leafy vegetables in different ways or add them to my curry. Today I prepared the Maharastrian fenugreek leaves vada. I just cut the leaves into small pieces. Added smashed potatoes, gram flour, rice flour, sesame seeds, chopped green chillies and salt to taste. Shaped this mixture into balls and deep fried them. We usually take such deep fried stuffs with rice and dal for lunch in winter.

Those greens are so healthy - yes, we try to eat them whenever possible. Here, it seems fenugreek is not used (many do not know what that is), but I know them through Persian (Iranian) recipes and can only find them in Middle Eastern markets. Indians use this a lot too? I would love to try this!
