Everything but the squeal

Have you ever heard of scrapple? Maybe you've heard the phrase “everything but the squeal.” That's because scrapple has been traditionally made with pork scraps. Beef and turkey scrapple are also made for those who don't eat pork. I accidentally tried beef scrapple once, but it's not the same. Anyway, scrapple is basically a corn meal mush with cooked meat scraps and spices added. It was a way to use all of the pig that had been slaughtered. A lot of meat is left behind after butchering. Scrapple makes use of it. There was a time when, as a child, I'd find veins in the scrapple, but that is rare today. I'd pull them out and eat the rest. I haven't found veins in 60 years. But I do love it - thinly sliced and crispy, with a little softness in the middle. Sometimes I eat it with eggs. Other times I'll eat it with buttered toast as a sandwich. But, in all ways, with ketchup. I didn't think to take a picture just now when I ate mine, no eggs, no toast, but yes ketchup. So the image I used is from the internet. In most places around the US, it can be found in the frozen meats section. In my area, the tri-state area surrounding Philadelphia, it can be bought fresh in Amish markets or sealed in plastic in the section where you find bacon. If you ever get a chance, go ahead and try some. It might surprise you.

I have to tell you, finding veins in my food would seem daunting to me. I've definitely heard of scrapple, but I've never seen it offered in a restaurant, or offered for sale at a supermarket. Perhaps though, if we had Amish markets around here, it would be up for purchase. If I came across it I wouldn't turn my nose up at it though; I'd try it.

A lot of people eat it with pancake syrup. I never have, although I don't mind syrup getting on my bacon or sausage. But syrup just wasn't something I ever saw growing up.

I have not heard of this scrapple before. I will have to look to see if it is sold at Walmart the next time I go.

Look online to see if your Walmart offers it. Some brands are better than others because they have more meat, the only one I found out west was Joines, but Rapa is sold in many areas. The best is direct from the Amish, but at $10/lb, I haven't bought any.
