Homecooked lunch: chicken curry and seasoned dried anchovies

I was supposed to make chicken afritada (tomato-based chicken stew) for lunch today but I was missing an important ingredient so I went for chicken curry instead. I found a pack of green curry mix in my spice bin and dissolved the powder in a cup of evaporated milk. I poured this mixture all over my simmering cut-up chicken fillet that also had carrots, potatoes, bell peppers and bay leaves.
I also made seasoned dried anchovies as side dish. I fried the anchovies and added some liquid seasoning, hot sauce, ketchup, brown sugar and chili flakes. We saved some of these for later when hubby gets to open a can of cold beer while watching Netflix. He likes spicy stuff with his alcohol.
Speaking of Netflix - I think I haven't watched anything from Netflix for like a month already. The last series that I watched was Michael Pollan's "Cooked" and I really enjoyed it.

@almostoveryou a spicy vinegar dip is good but I prefer mine with Mang Tomas.

There are days when I'd go for one-pot meals because they're quick and easy. Casserole sounds good.

That's glorious. I love beef roast. I'd mop up the sauce with the biscuit.
